Prince Tahini with Herbs and Olives
A delicious combination that perfectly complements all types of Mediterranean cuisine. Can be served as a side dish, or sprinkled generously on roasted vegetables such as zucchinis, peppers, or eggplants.
1¼ cup of raw Prince Tahini
1/ 3 cup of basil
1/ 3 cup of rocket
1/ 3 cup of parsley
Juice of 2 lemons
3/ 4 cup of cold water
4 crushed garlic cloves
Salt
White pepper

Place the water, herbs and lemon juice into a food processor and mash to a smooth puree. Add the Tahini while mixing, and season with the remaining ingredients. Transfer to the serving dish. Mix the olives, garlic, and thyme, and place a small amount on each dish.
